I have long professed my love of soup. So here you go, my favorite chicken soup recipe:
You will need
1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. oil
32 oz chicken broth
2-3 cups water
2-3 cups assorted fresh vegetables (broccoli, carrots, cauliflower, etc)
1 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
1/2 cup instant white rice, uncooked
Make it
COOK and stir chicken in hot oil in large saucepan on medium-high heat until chicken is done.
ADD broth, water, vegetables and dressing mix. Bring to boil; cover. Simmer on low heat 5 min.
STIR in rice. Remove from heat. Let stand, covered, 5 min.
I usually buy a Read Pac bag of fresh vegetables, but I don't see why you couldn't substitute frozen vegetables. I also sometimes skip the rice, it's a very easy/versitle chicken soup recipe. I absolutely love it!
